When is the coffee house open? Can I pick up my online order?

The coffee house is open Thursday, Friday, Saturday and Sunday from 7:00am - 1:00pm. We offer Thursday Delivery, plus coffee beans and take ‘n’ bake scone wheels are available for pick-up at the coffee house with advance order online. click here to order

When and what do you deliver?

We deliver our coffee beans and take ‘n’ bake scone wheels to your door EVERY THURSDAY (except major holidays). We offer a variety of take ‘n’ bake scone wheels, plus we offer light, medium, dark and decaf roasts—fresh-roasted daily and delivered to you whole bean or ground-to-order.

Our take ‘n’ bake scone wheels are made from scratch—ready to slice and bake (or slice and freeze. Our unbaked scone dough freezes beautifully, and requires no thaw time prior to baking).

Where do you deliver?

We deliver within Wilmette, Evanston, Winnetka, Kenilworth, Northfield, Skokie, up to Glencoe, out to Glenview and beyond…and we’ll deliver to other areas by special request. Ask and we’ll do what we can to make it happen.

How does in-store pick-up and Thursday Delivery work?

Our take ‘n’ bake scone wheels are made to order and we roast coffee beans daily to make sure your order arrives at peak form. When you place your order, select in-store pick-up during our regular business hours or Thursday Delivery. We request orders at least 48 hours in advance of desired pick-up or delivery. Please order accordingly if you would like to enjoy your coffee beans or take ‘n’ bake scones for a particular occasion or on a particular day.

We deliver on Thursdays only, with the exception of some holidays. We’ll leave your order at the door and ring the bell to try to ensure you’ve picked up the order before we leave.

Will you deliver baked scones or brewed coffee?

At this time we do not deliver baked scones or brewed coffee, but we’ll always consider ways to make it happen. Ask us what’s possible.

I scored a scone wheel! How do I bake it?

Ideally bake scones in a convection oven, high fan, preheated to 350 degrees. No convection oven? No problem. Simply preheat your conventional oven to 350 degrees. Baking all the scones at once? Slice into 9-10 pieces by first slicing the scone wheel in half, and then carefully slice each half into pieces depending on desired scone size.

Next, arrange your scones onto an ungreased baking sheet, preferably lined with parchment paper or a silpat mat. We like to stand our scones up tall & vertical to bake. Some prefer to lay each scone down on it’s side. The choice is yours really.

This next step is not required—you can simply now put the scones in the oven—however, we strongly recommend this step! Beat a few egg whites—just the white; no yolks—then lightly brush each scone top and sides with the egg white (ideally use a hand-mixer with whisk attachment for this step, and whip the egg whites until soft peaks form. Then brush the scones). It’s important to go easy on the egg wash and keep the liquid off the baking sheet—otherwise you could get a scone with a rubbery bottom.

Finally, sprinkle your unbaked scones with cane sugar, if desired. If you’re baking savory cheddar chive scones, then skip the sugar sprinkling.

Bake your scones at 350 degrees for roughly 20-25 minutes in convection (high fan), or approximately 50-55 minutes in a conventional oven, all depending on your oven and desired doneness (is that a word?). Make sure the outside of the scone is nice and crispy, rich medium brown. Enjoy!

How long will a scone wheel last in the refrigerator?

Not long! Two days. Which naturally leads to the next question.

Can I freeze my scone wheel?

Yes! Our scone dough freezes beautifully, and does NOT require time to thaw when you’re ready to bake.

Rather than freezing the wheel in its entirety, we suggest that you slice the wheel into your desired pieces (roughly nine to 10 pieces) and place the pieces together in a freezer bag. Lie flat, and try not to overcrowd the scones or have them touch in the freezer bag. You may need two bags and some parchment paper to separate the scone pieces. Be sure to squeeze out the excess air and then wrap in tin foil to help protect the delicate dough.

Once the scone pieces are frozen in the freezer bag, you can shake up the bag (if you want) since the scone pieces will be frozen hard and no longer stick together!

Again, no need to thaw scones before baking. When you’re ready to enjoy, simply take the scone(s) out of the freezer and brush the still frozen scone with the whipped egg white and sprinkle with cane sugar. Bake off as you wish.

What’s the best way to store my coffee beans?

You can keep coffee beans on your counter in an airtight container for roughly one week. If you do not plan to use your coffee immediately, you can freeze the beans — either whole bean, or ground. Place our Alchemy coffee bag inside a freezer bag, squeeze out the excess air and place in the freezer for up to one month.

Do you ship coffee beans and take ‘n’ bake scone wheels?

Sometimes, by special request and if we’re able to pull it off. At the moment, we’re working to perfect delivery.
